AT FINALS:
The Beauty, Poise & Projection (microphone/evening gown) and Physical Beauty & Muscle Tone (physique) rounds are judged during prejudging. The rounds will be very abbreviated at the evening show - strictly for the benefit of obtaining broadcast quality footage for the television program, and the benefit of the live audience.
Prejudging for the Strength, Flexibility & Endurance (routine) round is just a preparatory round for the judges, contestants and camera crew. It gives the contestants the opportunity to adjust their routine to, and get a feel for, the stage. It gives the judges a preview of what they will be judging later in the evening, but the judges are aware that the competitors are not going full out to avoid injuries and fatigue before they are judged. It also allows the camera crew to get of feel of where the competitors will be going on stage so they are ready for final taping. The routine is judged at the final evening show.
At the evening show, swimsuits (physique round) will be the first round on stage (this is already judged/scored).
Routines go next. Routines are tallied while this segment is going on (i.e. while number 2 is up, number 1's scores are being tallied.) No cuts are made to competitors, all competitors will compete in the evening show.
Last is the evening gown round (already judged/scored). During this round the last couple of routine scores are finished being tallied and results are prepared for the Mistress of Ceremonies to announce. Since competitors are already in evening gown, we will go immediately to awards presentations after the evening gown round is complete.
There are about 5 people who know the placement before it is announced: 1) the tallier, 2) the checker, 3) the teleprompter operator who happens to be set up in the same room, and 4&5) there's usually a runner or two in the room - they run scores from judges to the tallier and results envelopes to the Mistress of Ceremonies. Prior to the evening finals only the tallier and the checker know how the placement is shaping up.
AT QUALIFIERS:
It can vary, depending on other events the promoter may be holding simultaneously.
1) It may run as finals - physique and microphone judged at prejudging, routine judged at evening show (most common).
2) All rounds may be judges at prejudging (often).
3) All rounds may be judged at evening show only (rare).
